Vanilla Ice Cream Sandwiches

When I was growing up, my mother always knew how to stay frugal and somehow give me and my siblings what we wanted. Instead of buying ice cream from the ice cream truck, she would have our own hard ice cream in the house, with cones (sprinkles, chocolate, etc), and they always seemed to last longer than the soft ice cream the other kids had. So in honor of her, I found this Vanilla Ice Cream sandwich recipe, from Serious Eats, that is similar to the one she used to make for us. I love you mom (smiles).
