Roasted Broccoli

Out of all the recipe Friday’s I’ve done, I can’t remember posting any wonderful side dishes. Every main course has a wonderful side dish accompanied with it. So I thought I’d post this wonderful Roasted Broccoli with Smoked Paprika Vinaigrette and Marcona Almonds recipe from Food52. I can definitely see this recipe paired with any meat or poultry dish. I just love broccoli and I have my mom to thank for it. She used to tell me they were little trees (smiles), gotta love that lady.   1. I like the sound of this dish…almonds and smoked paprika really will make the broccoli interesting. I have just roasted it in the past with olive oil and garlic. Can’t wait to try this.

  2. You know, when I was growing up I think I was the only sibling who liked Broccoli. It’s a fantastic compliment with some many main courses, be it a traditional roast, shepherds pie or even fish & chips (Oh I am strange). Let’s all make it a Broccoli weekend!!!

    • You’e right, broccoli does make a wonderful addition to any meal. When it doubt, I usually just steam some broccoli and enjoy it :). And broccoli with fish and chips is not strange.. that’s my type of meal lol. And I’ve been tagged? Okay let me go see what’s going on lol. I hope you have a great weekend :)

    • Smocked paprika is tricky to use. Usually I put in a little at a time to control the flavor. But I can’t wait to make this myself on Sunday :). I hope you have a great weekend :)

  4. My mom is working on my kiddos with the “little trees” thing too, and I have to say she’s having some success. Unfortunately it didn’t work with me. I can only handle broccoli covered in cheese. Although I have been using more broccoli rabe lately and enjoying it. At any rate, I’m passing this one along to my mom. I think she would love this and might even have some success getting my kids to eat it. (Maybe me too.) ;)

    • Oh the little trees instantly worked on me lol. Maybe it was because it was my special time with mom away from my sister and brother. She would explain would “trees” could do for my body and I got to be like her one day. Of course when you little you want that lol. Kristy.. no more cheese you have to experience broccoli lol.   5. Roasted broccoli is one of my favorite things in the world, but I never thought to use smoked paprika, marcona almonds, and sherry vinegar. Sounds amazing and delicious! You find the best things!

  6. I love roasted broccoli – I gotta say I’m not a big fan of nuts in cooked dishes… they always seem to have a kind of soft, warm consistency when cooked. It’s a great way to serve the vegetable though – so yummy :) Love the spice additions too.

    • I’m not a big fan of nuts in dishes either to be honest. I did try this but without the nuts and I absolutely loved it. I’m sure if the nuts were in this, it would’ve had a crunch effect. I hope you had a great weekend :)

  7. This sounds nice variation of roasted broccoli that I should be saving in my folder. I know roasted veggie recipes are always handy. :-)
