When spring begins, I always change my eating habits. Although I love comforting food, I want to look tone for summer. So today is all about ‘Salads‘ and I’ve fallen in love with this Caesar Salad with Pancetta recipe from Food52 (I know, I stay at this website). I am a Caesar salad lover, so whenever I find a recipe that spices things up.. I try it. I can also see myself adding grilled chicken to this recipe. The pancetta sounds so perfect with Caesar salad. I know my husband will like it…he eats a Caesar salad at least once a week.

I love salad (I grow my lettuce etc) and can’t wait for the summer to be able to pop out and pick the leaves I want. I am also very fond of Ceasar Salad and your’s looks particularly delicious.

Caesar salad was one of Dad’s specialties that he learned when he waited tables. I was fascinated watching him prepare it and it remains a personal favorite to this day. I’m glad you included the anchovy fillets. It’s just not a Caesar without them.

I have never had a caesar salad with pancetta but I think I’m about to! Food52 is an amazing site. There are several blogs and books I would love to cook my way through in their entirety but I have my go-to sites too.
