I’ve yet to come upon a cheese that didn’t make a great grilled cheese sandwich. When in doubt, add a little parmigiano reggiano. Never thought to add sage. Hmmm…

When in doubt, add any cheese you can LOL. But I agree with you, I’ve never come across any cheese that haven’t made the best grilled cheese.
