Today’s theme is all about ‘cake‘.. and I wouldn’t be true to myself if I didn’t feature this amazing dessert that’s had me drooling since last week (smiles). This Old-Fashioned Apple Spice Cake recipe comes from my fav spot, Food52. This cake just screams “Make me” and I will oblige and make this just for me (okay, maybe I will share). But I can definitely see this cake being made for a family get together. Don’t ya just love it when you bake and the whole house smells wonderful? I love that about fall. I’ve never been a HUGE cake person (preferring ice cream over cake), but I do LOVE chocolate cake. And I can eat that cake all day long. So in the spirit of great desserts, today’s theme is all about, you guessed it, ‘Cake‘. And these aren’t your average cakes… like this amazing Applesauce Cake with Caramel Glaze recipe from Food52. I just love the applesauce in this recipe.. and that glaze. Yes, I’m stopping myself from drooling right now (I drool way too much when looking at delicious desserts) and stepping away from the PC. Espresso Chocolate Cupcakes

After a long work week, do you ever come home and say, “I deserve a treat?” I completely understand if you do because I always feel like I deserve a treat. And what better treat to indulge in than chocolate (smiles). Yes, I’m still obsessed with chocolate, and even more so since I saw this Espresso Chocolate Cupcakes recipe on the wonderful blog Call Me Cupcake! (love that name). I don’t think I’ve ever said this before, but this cupcake is gorgeous… I’m unsure if I’d want to eat it. But give me time, I’m sure I will eat it eventually (laughs). Peach Shortcake

I hope everyone is enjoying ‘cake day‘ so far (I know I am *laughs*), and since this is the last recipe of the day, I thought I’d go out with a bang. This Peach Shortcake with Vanilla Whipped Cream recipe comes from Kitchen Daily.. and looks so delicious. The Vanilla whipped cream takes this cake to another level, but I can totally see myself adding vanilla ice cream to go along with this. Inside My Kitchen

….. Well, you won’t be going inside my kitchen per say (I wanted to take photos, but my kitchen is not camera ready yet *laughs*), but you will see photos of my favorite dishes to make and eat .. any day of the week (twice if there are leftovers). As you all know, I decided to have a pre-birthday celebration with you and share my favorite things (each Saturday before my birthday). There are so many dishes I love to make/eat.. but these dishes, as simple as some of them are, make me happy the most. So… here are my favorite go-to’s.
* 1st photo: I LOVE Grilled Chicken Caesar Salad.. it just makes me happy.
* 2nd photo: Yes, that’s a photo of my cast iron pan (passed down from 5 generations), with chicken quarters, seasoned with a no salt blend of spices, along with garlic and pepper. I love baked chicken.
* 3rd photo: My bowl of Shrimp Fettuccine, makes my day (smiles). I have made a healthier rendition of this dish, but I go back to the original recipe sometimes (smiles).
* 4th photo: Here’s a story.. my first birthday cake, my mother bought for me, was made by a sweet, older southern woman.. from scratch. She knew I LOVED chocolate, so she decided to add a hard frosting on top. And ever since that day.. I only crave THAT CAKE. Sure I’ll eat other cakes, but they never measure up to her cake. And I’m still trying to replicate her genius.
