Whenever summer rolls around, I find myself choosing lighter but fuller meals. I know that probably doesn’t make any sense, but I’m not a bird eater people (laughs). I LOVE a good meal.. and would rather not feel weighed down after eating (especially in the summer time). Which is why I chose the theme ‘I Heart Salmon‘ in the first place. Growing up, I remember my mom making us Salmon Cakes. I enjoyed them but in all honesty.. they never were my favorite.
